Aash-e Sholeh Qalamkar




Soak the peas, beans and lentils in water for 5 hours. In a large pan heat up the oil and fry the onions until golden brown.

Cube the meat and fry together with the onions until browned all sides.

Add the peas, beans, lentils, turmeric, salt, pepper and hot water enough for covering it.

Cover and let it cook on low heat for about 1 hour. Wash the rice and add it. Cook for 20-30 minutes more.

Wash parsley, dill, coriander, spinach, spring onions ends and chop finely. Add it to the pan and cook for 10 minutes more stirring constantly.

Add more water if necessary.
