Afkhadh al-Dijaj bil-Teen
Sprinkle the chicken with salt and pepper. Heat up some oil in a large skillet and brown the chicken all sides.
Remove the chicken from the skillet and arrange it in a single layer in a baking pan.
In the skillet add some oil more and sauté the onions and garlic until soft.
Add the tomato sauce, broth, dried figs, coriander, salt and pepper to the skillet, bring it to a quick boil stirring occasionally.
Pour this mixture all over the chicken and bake on a previously pre-heated oven at 180°C for 40 minutes or until the chicken is tender and the sauce is nicely thickened.
Garnish with the parsley and serve with rice or bulgur.
