Bacon and Cabbage Soup




Add the bacon to a large pan and cook until it renders its fat and begins to brown.

Drain any excess of fat from the pan, then add the potatoes, tomatoes and enough chicken stock to just cover everything.

Season to taste, bring it to a boil, then reduce to a simmer and cook until the potatoes are tender (around 20 minutes).

Add the cabagge and allow the soup to simmer for around 4 minutes or until the cabbage is tender, serve directly.
