Banana Peanut Butter Oatmeal Muffins




In a bowl, mix together the oats, baking powder, baking soda and salt. Set aside.

In a bowl, whisk together the vegetable oil, brown sugar, eggs, mashed bananas, peanut butter and buttermilk until smooth.

Pour this mixture into the flour mixture and stir to combine just until the flour is incorporated.

Line a muffin pan with paper liners.

Divide the batter evenly among the muffin cups, filling just about up the top.

Bake in a previously pre-heated oven at 180°C and bake for 18 minutes or until a toothpick inserted into the center comes out clean and the top springs back when lightly pressed.
