Beiftek Ala Creole (Martinique)
In a bowl, combine the garlic, oil, vinegar, salt and pepper, stir well. Place the steaks in the bowl with this marinade and marinate covered for at least 3 hours (reserve the marinade).
Heat the grill (we used a grillpan) and broil the steaks for around 8 minutes on each side (or until done in the prefered way).
Baste from time to time with the marinade. Transfer to a flame resistant dish. Pour the grill juices over it.
Heat the rum in a small pan and pour it over the steak. In an open space, flambé the steak, slice and serve (we didn't cut it for the picture).
