Beninese Beef Stew




In a large pan, melt the butter and used it for browning the beef. Remove the meat and reserve.

In the same pan add the onions and garlic and fry until golden brown. Add the flour, curry powder, salt, cayenne pepper and the peanut butter.

Heat for a minute stirring constantly, then add the coconut milk, little by little stirring until blended, add the water and mix until blended.

Continue cooking, stirring constantly until the sauce becomes thick.

Add the meat and the chillies and simmer covered until the beef is tender.

20 minutes before the meat is ready add the okra and the sweet potato.

Serve immediately with rice.
