Black Bean Chicken

                                                                                                  

Ingredients:

Preparation:

Sprinkle the chicken with pepper. In a wok, heat up the oil and sauté the chicken about 3 minutes on each side, remove from the pan.

Add to the wok the onion, green pepper, jalapeño pepper and garlic. Cook for 2 minutes or until the onions are soft. Stir in the cumin, tomatoes, lemon juice and black beans.

Return the chicken to the pan, cover and let it simmer for 20 minutes. Remove the lid and continue cooking until the chicken is tender and done, around 10 minutes.

Serve with rice.
