Blini with Beef or Mushrooms

Preparation;

For the beef filling:

In an skillet, heat up some oil and sauté the beef until cooked through. Season with salt.

In a separate skillet, fry the onion until golden brown.

When both preparations are ready, stir them along with the rice in the same skillet. Mix well.

For the mushroom filling:

Wash and chop the chanterelles. Heat up some oil in an skillet and sauté until golden brown and pretty dry. Season with salt.

In a separated skillet, fry the onion until golden brown.

When both preparations are ready, stir them along with the rice in the same skillet. Mix well.

For the pancakes:

Pour the water into the flour and stir well. Then beat until all lumps disappear. Stir in the egg, salt and milk. Mix well until getting a thin and smooth batter.

Pre-heat a medium size skillet, pour some oil (around 1 tsp per pancake).

Add 1/4 cup of the batter (per pancake) and cook each pancake on both sides until light golden brown.

Once you've the Blini ready. Put a full tablespoon of filling on each one of them and fold in your favorite way.

They are traditionally served with sour cream.
