Cake topping:


Beat the egg whites till foamy, add little by little the sugar beating until soft peaks form.

Add the egg yolks, coconut milk, condensed milk and beat till fully incorporated.

In a bowl combine the flour and baking powder.

Add the dry ingredients to the egg mix, little by little mixing on low speed.

Pour the mix on a baking pan and bake on a previously pre-heated oven at 180 °C for 50 minutes or until a toothpick inserted in the middle comes out clean.

In a bowl, combine the condensed milk and the coconut milk. Pour the flaked coconut, and stir to combine.

Poke holes with a fork throughout the cake and pour the coconut mix over it.

Keep the cake refrigerated until serving time.
