Bolon de verde




Melt the butter over medium heat in a large pan.

Add the plantains chunks and cook until they're very soft, they should be lighty golden but not too crispy. Keep stirring.

Sprinkle them with chili powder, cummin and salt.

Mash the plantains (still warm) using a masher until you obtain a chunky dough.

Form balls slightly smaller then a tennisball. Make a hole in the middle of each ball and fill it with (cheese, chorizo or chicharrones).

Gently press the filling into the hole. Heat up the oil and fry them until golden and crispy on each side.

Serve immediately.
