In a large bowl, mix the eggs, bacon, sauasages and cheddar, mix well.
Add salt, pepper, parsley and coriander seeds to the bowl, mix.
Open a slice of beef and place 2 tbs of mixture towards the edge of the steak.
Roll the steak and fold like a spring roll.
Stick a tooth pick right though, to hold the fold (we used kitchen twine).
Heat up some oil in a large skillet and fry the beef with the garlic, until browned all sides.
Prepare a medium sized baking dish and place the beef side by side.
Top with the onions, pour the ale and season with salt and pepper to taste.
Cover with aluminium foil and cook on a previously pre-heated oven at 180°C for about 45 minutes.
Uncover and cook for 30 minutes more.
Serve with baked potatoes (we ommited this).
