Bushmeat Skewers with Peanut Satay




Soak the skewers in cold water for about 15 minutes before using.

Meanwhile season the meat with salt and pepper. Mix together the lemon juice, olive oil, garlic, finely chopped chilli and soy sauce.

Pour this over the meat and allow to marinate for at least half an hour.

While the meat is on the marinade, prepare the satay by incorporating the rest of the ingredients together in a small pan.

Bring it to a simmer, add sugar and cook gently for 5 minutes.

Prepare the meat by threading two or three cubes onto the skewers. Brush with the remaining marinade and place in a barbecue (or grill pan like we did).

Cook for a few minutes on each side until the meat is done.

Serve the skewers on a bed of rice (we ommited this) accompanied by the hot satay sauce.
