Cassoulet Mauricien




Wash the beans and soak in plenty of cold water for an hour. Drain, then place in a pot with 1 liter water.

Season with salt and the cloves, bring it to a boil and simmer for an hour (or 20 minutes in a pressure cooker).

Place a large casserole on medium heat and add 4 tbs oil. When hot add the onion, garlic, ginger and thyme. Cook until the onion becomes translucent.

Add the chopped tomatoes and cook until the tomatoes break down and a smmoth sauce forms.

Add the beef and stir well. Continue to cook for around 10 minutes, then add the bacon, sausages and chillies, cook for 5 minutes more.

Drain the beans (reserve the cooking liquid) and add them to the tomato stew. Cook for around 10 minutes or until the beans have heated through.

Add the reserved liquid, stir to mix and cook for 20 minutes or until the sauce reaches your preferred consistency.

Season and serve immediately with rice or bread.
