Castella or Kasutera




Grease a square (we used a rectangular one) baking pan.

In a large bowl whisk the eggs and the sugar for about 5 minutes or until batter forms a ribbon when wire whip is lifted, the colour should be light yellow.

Slowly pour the flour mixture into the batter.Next add the milk and then the orange juice. Mix it well. Then add the orange zest, honey and mix it again well.

Last add the oil and make sure it's incorporated into the batter completely.

Pour the batter into the prepared pan. Place it in the middle rack of the oven and bake (on a previously pre-heated oven at 170°C) for 45 minutes or until the cake as prick with a

toothpick it comes out clean.

Remove from the pan as soon as it is done. Place it on a cooling rack and let it cool down completely. Wrap with plastic wrap overnight before cutting.
