Cayman Mango Chicken

                                                                                                

Ingredients:

Preparation:

Using a mallet or rolling pin, pound the chicken breast until flattened. Then spread 1 tbs of the mango chutney over half the chicken breast. Fold it over and set aside.

Beat the egg in a bowl, place the evaporated milk in another bowl.

Mix 1 tsp of the garlic powder with the flour and breadcrumbs ( each one by separated, and season to taste with salt and pepper) mix well.

Dip the chicken first in the flour mixture, then in the milk, next back in the flour, then in the egg and finally coat well in the breadcrumbs.

Add 4 tbs of oil to a deep frying pan and when hot, fry the chicken until golden brown both sides.

Transfer the chicken to a baking dish and bake it in a previously pre-heated oven at 180°C for around 25 minutes or until done all the way through.

We served it garnished with fresh mango slices.
