Melt the butter in a large skillet. Add the chicken pieces and brown on all sides over medium heat.

Stir in the garlic and onions, reduce the heat, cover tightly and cook without stirring for 15 minutes.

Add the tomatoes, wine, lemon juice, half the herbs and peppercorns, the bay leaf, salt pepper, pepper flakes and paprika.

Simmer covered until the chicken is tender (around 35 minutes).

Stir in the rest of the herbs and simmer for 10 minutes more.

Taste and correct the seasoning. remove the bay leaf. Sprinkle with some extra fresh basil (finely chopped) and serve at once (we did it with crusty bread).
