Chicken Ghiveci 




Heat up the oil in a large frying pan, add the onion and garlic and stir fry it for around 1 minute or until the onions are soft.

Add the bell peppers and stir fry for 1 minute, then add the chicken and cook until browned all sides.

Add the rest of the ingredients, stir fry for a minute, cover and cook until the chicken is tender.

Garnish with the thyme and rosemay and serve with crusty bread or rice.
