Chicken Mulligatawny soup
In a large saucepan bring to a boil the chicken with the water.
Add salt, pepper, coriander, cumin, saffron, tomatoes, half the onions, cinnamon, garlic and ginger, let it simmer for around 30 minutes.
Remove from the heat.In a frying pan, heat up the oil and brown on it the remaining onions.
When browned, add the coconut milk to it.
Then add this mixture to the saucepan with the chicken.
Add the lemon juice and bring to a boil, letting it simmers for 15 minutes.
