Chocolate Cupcakes with Oreo's and Vanilla Pudding



For the frosting:


Dissolve the cocoa powder in the hot water. Let it cool down to room temperature.

In a large bowl, whisk together the flour, baking powder and salt, set aside.

Then in another bowl, cream the butter and sugar until light and fluffy.

Add the egg and beat until smooth. Beat in the vanilla extract.Add the flour mixture and beat with envolving movements until well incorporated.

Add the cocoa mixture stirring until uniform and smooth.

Line a cupcake tray with paper liners, add the bottom of each one lay a cookie and then pour evenly the batter on top.

Bake on a previously pre-heated oven at 180°C for 20 minutes or until risen or prick with a toothpick, it comes out clean.

Let them cool down completely before covering with the frosting.

For the frosting, in a large bowl beat the whipping cream until forming soft picks, add the milk and the pudding mix together with the sugar, mix until

well blended (don't overbeat).

Pipe the frosting on top of the cupcakes and decorate each one with a cookie.
