Coconut Red Lentils   

                                                            

Ingredients:

Preparation:

Heat up the oil in a large pot, sauté onions, garlic and chili until soft.

Add the turmeric powder and allow to cook for a minute.

Add the lentils, tomatoes, coconutmilk and stock, bring this to boil.

Reduce the heat and cook for around 30 minutes or until the consistency is creamy.

Add the salt and pepper to taste and finally sprinkle with mint leaves.
