Cream butter with half of the sugar. Add the egg yolks one by one mixing until combined.
Sift together flour, baking powder, baking soda, salt cinammon and nutmeg in a deep bowl.
Add lime rind and grated coconut and mix well, until coconut is evenly distributed through the mixture.
In a separated bowl, beat the egg whites until fluffy, add little by little the rest of the sugar and whisk until stiff peaks form.
Add the flour mixture to the butter mixture. Mix in the egg whites, vanilla, lemon and coconut extract.
Add both milks slowly, until mixture makes a fairly stiff dough.
Bake in a greased pan at 180°C for 50 min. Cut into squares or slices and serve.
