Congolese Chicken with Peanuts




Brush the chicken with the butter and sprinkle it with salt.

Place on a baking dish breast side down and bake in an oven previously pre-heated at 180°C for 30 minutes then turn them breast side up.

Blend the peanut butter with the mayonnaise and brush this mix over the chicken, so that they're completely smothered in it.

Return to the oven and bake for 20 minutes or until done.

Meanwhile, fry the green peppers in just enough vegetable oil to stop them for burning. Continue cooking until they're quite dark brown.

Sprinkle the peanuts over the chicken. Serve on a bed of saffron or turmeric rice and side it with the green bell peppers.
