Couscous de Timbuktu
In a large metal casserol,e, heat up the oil and add the meat and garlic, stir fry until the meat is browned all sides. Add the spices and stir fry for a few minutes.
Add the tomatoes and enough water to just cover the ingredients, bring the mixture to a boil. Lower the heat, cover and simmer for around 1 hour or until the meat is tender.
Add the onions and dates, simmer uncovered until the sauce has reduced by half its volume (around 35 minutes).
Adjust seasonings, transfer to a bowl, sprinkle with chopped parsley and serve with couscous (prepared following the instructions in the package).
