Couscous in peanut sauce




In a large bowl, mix together the garlic, crushed bouillon, ground ginger and pepper and use it for coating the chicken.

Set it aside, letting it to marinate.

Combine the tomato, onion and 250 ml chicken stock in a blender and mix until getting an smooth paste. Set aside.

On a frying pan, heat up the oil, fry the chicken until browned all sides.

Add the tomato mix and cook, covered until it start to boil.

Add the tomato paste, the peanuts and the peanut butter, reduce the heat and continue cooking covered until the chicken becomes tender.

Season to taste.

Prepare the couscous with the remaining chicken stock.

Serve the couscous surrounded with the chicken and topped with the peanut sauce. Garnish with the spring onions and some peanuts.
