Curried Chicken-Banana Soup
In a large saucepan, heat up the oil and cook the chicken pieces until browned all sides. Remove from the pan and set aside.
Add the onion and garlic to the pan , sauté until the onion is translucent, then stir in the chile powder, the curry and the black pepper.
Cook for around 2 minutes. Add the tomatoes, stock, chicken pieces and the coconut.
Bring it to a boil, then reduce the heat and let it simmer for around 30 minutes.
Add the banana slices and let it simmer for around 10 minutes.
