Cuscus bil Khodra

                                                                                                 

Ingredients:

Preparation:

Add the oil in a large frying pan and heat it up.

Cook there the meat and the chopped onions until the onions begin to change color around 10 minutes (stirring constantly).Set aside.

Whisk the tomato purée into the water and then add this to a saucepan together with the beans, spices, salt and the rest of the vegetables.

Bring it to a simmer, then cover and cook on low heat for around 30 minutes or until the vegetables are tender (stir  occasionally)

About 10 minutes before the vegetable stew is ready add oil to a pan and use it for frying the chilies for around 2 minutes.

After that time add the vegetable stock, salt and pepper and bring it to a boil.

Allow it to boil for 3 minutes and then remove the pan from the heat.

Stir in the couscous in the pan, cover it and let it stand for 5 minutes.

Arrange the couscous on a serving dish, the meat in top of it and spoon the bean and vegetable sauce over everything before garnishing with the spring onions.
