Dark Beer Soup with Pork
In a large saucepan, heat up some oil and add the onion and pork.
Cook for about 8 minutes or until the onion is soft and the pork has browned all over.
Add the beer and stock, then bring it to a boil, reduce to a simmer, cover and cook for 60 minutes or until the pork is tender.
Stir in the beans and return it to a boil. reduce to a simmer and cook for 20 minutes or until the beans are heated through.
Ladle into warmed soup bowls and serve plenty of crusty bread.
