Combine the chicken with 1 tbs oil, spices, carrots, green beans and peppers in a bowl.
Allow to marinate for at least 2 hours. Heat the remaining oil in a casserole dish, add the onions and fry, stirring until lightly golden and softened.
Add the chicken and fry until browned all sides.
Add the remaining ingredients, except the tomatoes, reduce the heat to a simmer.
Cook stirring frecuently until the chicken is done and almost all the liquid has evaporated.
Add the tomatoes and simmer a few minutes more.
Serve with rice and fried plantains.
