Fah Sang Peng
In a large bowl, place the ground peanuts, flour, castor sugar, baking powder and baking soda until well combined.
Pour the oil while kneading the mixture until all the sugar melted and you can roll the mixture up into a ball without sticking to the bowl or your fingers.
The mixture mustn't crumble as roll.
Scoop a tablespoon of the mixture in your palm and roll it into a small ball. Repeat the process with the rest of the mixture.
Lay the balls in a previously lined baking dish. Put a half of a peanut on top of each ball, the brush with the egg white.
Bake them in a previously pre heated oven at 180°C for around 17 minutes or until golden brown.
