Fideos a la Catalana



Heat up half the oil in a frying pan, add the sausage and cook then over a medium heat and turn them frequently until lightly browned on all sides.

Remove from the pan and set aside.

In the same pan heat the remaining oil up, add the onion and the garlic and cook with low fire until soft.

Add the pasta and cook for 5 minutes or until very lightly toasted.

Add the tomatoes and the paprika, return the sausage to the pan and add the bouillion with water until everything is covered.

Season to taste stir to mix and  bring everything to a boil.

Continue cooking until the pasta is ready and the water is absorbed.

Stir and sprinkle with the chopped parsley.
