Fijian Chicken Curry




Heat the oil in a large pan and add the onions, seeds, cinnamon stick, cloves, cardamoms and curry leaves.

Stir and cook for ten minutes, add the garlic along with the turmeric and curry powder.

Stir and cook for a minute before adding the chicken and salt. Stir cover and cook over medium heat, stirring from time to time. After 15 minutes add the tomato.

If the chicken starts to stick add a little bit stock or water. Cook for 30 minutes more, transfer to a bowl and garnish with the coriander leaves. Serve with rice.
