Ga Ro Ti with Con Sot Ca Chua

For the Ga Ro Ti:

In a bowl, mix all the ingredients (except the chicken) and mix together until getting a thick paste. Rub this marinadeall over the chicken pieces.

Let it marinate for at least 1 hour.

Bake in a shallow pan  at 200°C for 15 minutes. Flip the chicken and bake at 180°C for 25 minutes.

serve with  Con Sot Ca Chua and garnish with sliced tomatoes, cucumbers and Vietnamese Vinegared Onions (we ommited the garnish).

For the Con Sot Ca Chua:

Heat up the oil in a wok and fry the shallots and garlic until soft.

Add the tomatoes and sugar, cook until the mixture becomes thick.

Add the rice and mix thoroughly. Add the spring onions, salt and pepper and mix well again.

Serve garnished with the coriander leaves (we ommited this).
