Garnaches

Preparation:

For the corn tortillas:

In a large bowl place the flour, baking soda and salt.

Add little by little the warm water. Mix well and let it rest for around 5 minutes.

Knead the dough for several minutes (with your hands), controle that the dough isn't too dry or too wet.

Take a piece of the dough and shape it into a ball the size of a plum, do the same with the rest of the dough, until getting around

16-18 balls.

Take two pieces of wax paper and with the help of a rolling pin (if you don't have a press) make a circle of around 15 cmt diameter.

Repeat the process with the rest of the balls.

Heat a frying pan (work one at the time), hold a tortilla in your hand a carefully removing the wax paper on each side.

Allow the tortilla to rest half on your hand and half hanging down and gently lay the tortilla down on the frying pan.

Cook the tortilla for 30 seconds or until lightly browned, flip and do the same on the other side.

The tortillas should be lightly toasted and little air pockets forming.

Cook the rest of the tortillas and set the aside (keep them warm).

For the garnaches:

Season and fry the beans (set aside)

Place the carrot and the cabbage in a bowl with the vinegar (set aside)

Put the beans on the tortillas.

Drain off the cabbage and place on top of the bean in the tortillas.

Sprinkle the top with the grated cheese.
