Preheat the oven at 180°C. In an oven safe skillet, heat up 1/2 tsp olive oil over medium heat.
Add the shallot and cook stirring frequently until translucent, add garlic and cook for 45 seconds, stirring constantly. Remove from the fire and set aside.
Add the remaining oil to the skillet and place the heat medium,
Season the chicken with salt, pepper, garlic powder and oregano. Add it to the skillet and cook 3 minutes on each side or until golden brown both sides.
Add the grape tomatoes (halved), kalamata olives, shallot and garlic mixture, lemon zest, lemon juice and half the parsley, then season with salt and pepper.
Place the skillet in the oven and roast for 10 minutes or until the chicken is completely done.
Remove from the oven and sprinkle with the remaining parsley and the feta cheese.
