Green Pea Soup




In a large pan, melt the butter and fry the spring onions and garlic until lightly browned.

Add the stock, peas, lettuce, sugar, salt and pepper. Bring it to a boil.

Simmer for 5 minutes, cool slightly and then put through a blender.

This soup can be served cold, garnished with chopped mint. If served hot, garnish with cream of formage frais (like we did).
