Guinness Beef Stew
Brown beef on all sides. Place the beef in a large sauce pan.
Leave about 1 tbsp of oil in the pan, add the onion and sauté until soft.
Add the leek, carrot and celery sauté until soft.
Add the garlic and fry until fragrant, mix in the flour and stir until well combine.
Pour in the Guinness. Scrapping off the flour that is stock on the pan.
Pour the vegetables and the Guinness into the pot with the beef.
Add the tomato paste, Worcestershire sauce and the bay leaf, bring it to boil and then simmer until the meat is tender and the sauce is thick.
Add in the mushrooms and continue cooking until the mushrooms are cooked.
Add salt and pepper to taste.
