For the Poolish:

For the Autolyse Mix:

For the Final Dough:

Preparation:

For the Poolish:

Mix in a bowl until well incorporated. Cover, let it rise in a warm place for 2 hours. Refrigerate overnight.

For the Autolyse:

Bring the poolish to room temperature. Add the autolyse ingredients and mix until getting an uniform mixture.

Cover and let it rise in a warm place for 30 minutes.

For the Final Dough:

Add to the final dough ingredients to the preparation. Knead 5 – 10 min

Let it rise covered in a warm place for 2 hours.

Divide the dough into two equal portions.

Form two round loaves and let it rise for 30 minutes.

Form two long loaves, lay on lined baking trays and let it rise for 40 minutes.

Make a cut with a razor blade on top of each loaf.

Bake in a previously pre-heated oven at 180°C for 50 minutes or until golden brown.
