Place the beef in a saucepan with enough salty water to cover it. Bring it to a boil, skimming any foam that appear at the surface. Simmer partially covered for 1 hour or until
In a frying pan, melt the butter, stir 3/4 cup of the raisins in and cook, covered over low heat until plump, around 10 minutes.
In a food processor, grind together the boiled beef, boiled potato, walnuts, the remaining raisins and parsley. Stir in salt and pepper and the beaten egg.
Shape the mixture into 12 flat oval patties, about 7 cmt long.
In a deep dish place the breadcrumbs, place the patties one by one in there and dust them all around.
Melt the remaining butter in a frying pan and fry the patties slowly until browned all sides, turning once (We ommited the butter and used a grill pan).
Arrange the patties on a dish and pour the raisins-butter sauce over them. Garnish with parsley sprigs and serve.
