In a large bowl, combine everything except 1/2 cup breadcrumbs and the oil. Knead with your hands for around 10 minutes or until the mixture is smooth, light and fluffy.

Moisten your hands with the cold water and shape the mixture into 8 thick round patties, then dip each one in the remaining 1/2 cup of bread crumbs, coating well each side.

Heat up the oil in a skillet over high heat. Fry the patties 4 at a time for about 5-10 minutes on each side, regulating the heat so that they brown deeply.

Make sure they get cooked thoroughly but not burn.

Serve immediately. We served it with mashed potatoes with a little bacon.
