On a dry pan, toast the nuts until nicely golden.
Transfer the nuts to a food proccesor, add 1 tbs sugar and ground (not too fine).
Whisk the egg whites with a pinch of salt, keep whisking and add gradually the sugar until the mixture is smooth and shiny.
Fold the flour and nuts in several batches, gently stirring the mixture after each add.
place spoonfuls of the mixture (we made small balls) onto a non stick baking sheet, 2 cm apart from each other.
Decorate the top with the almond flakes.
Bake on a previously pre-heated oven at 200 °C for 5 minutes.
