Hot Cross Buns



For the egg wash:

For the glaze:


In a bowl combine the flour, yeast, brown sugar, spices and the salt.

Add the eggs, one at the time and mix well after every addition.

Little by little add the butter mixing until the butter is incorporated and the dough comes together.

Knead the dough until it's smooth and elastic, transfer the dough to a floured surface and by hand add in the candied and dried fruit.

Place the dough in a bowl and cover it with plastic foil and place it in a warm spot to rise for around 2 hours.

After this time punch the dough down and divide it in 16 equal pieces, form each piece into a small round bun.

Place them on a parchment lined baking sheet in rows of 4. They should be with space enough for rising.

Make an egg wash and brush the top of the buns with the wash, cover it with plastic foil and let it rise for 30 minutes.

Preheat the oven at 180°C, brush the top of the buns with the egg wash again and then with a sharp knife make a cross in the tops of bun.

Place them in the oven and bake them for 15 minutes or until the buns are nicely browned.

Place the buns on a wire rack to cool down.

In the meanwhile prepare the glaze combining the sugar and the milk mixing until smooth.

Place the glaze in a small ziplock bag. Cut the end of the bag and pipe a cross in the cut marks of each bun.
