Jamaican Easter Bun




In a large mixing bowl, mix together flour, salt, baking powder, spices and brown sugar.

Mix thoroughly and add fruit (1 cup in total, combining small amounts of all the above mentioned), extracts, brown coloring and honey.

Make a well in the center of mixture and add melted butter and beaten egg yolks.

Mix again until like coarse bread crumbs.

Make another well in center of mixture and add beer or stout.

In a separated bowl, whisk the egg whites until foamy, add the sugar little by little and whisk until stiff peaks form.

Add this to the other mixture and with a spatula fold it until just blended

Turn into well greased baking pan. Bake for 1 hour at 180 ° C.If desired, press a few whole cherries into the top.
