Jollof Rice with Chicken, Beef and Ham




Heat the oil in a large pan. Add the chicken and beef and cook until browned all sides. Remove from the pan and reserve.

Lower the heat, add the onion and cook until soft. Add the tomatoes, tomato paste, garlic, chillies, ginger, salt and bay leaf. Fry for around 10 minutes.

Add the stock and the ham. bring it to a boil, reduce to a simmer and cook for around 10 minutes before adding the chicken, beef and rice to the pan.

Cover and let it simmer for 20 minutes or until the rice is done.

Serve garnished with the egg slices.
