Kebab with Garlic



  1. Mayonnaise, 160 ml
  2. Greek style yoghurt, 8 tbs
  3. Sour cream, 6 tbs
  4. Fresh lemon juice, 4 tbs
  5. Fresh chives (chopped), 4 tbs
  6. Garlic cloves (minced), 2
  7. Curry powder, 1/4 tsp
  8. Olive oil, 1/4 tsp
  9. Dried oregano (crumbled), 1/4 tsp
  10. Onion powder, 1/4 tsp
  11. Hot sauce (we used harissa), a dash of
  12. Salt
  13. Black pepper


For the Kebab:

Combine the beef, garlic, salt, sambal oelek, cumin and milk in a bowl.

Mix with your hands until smooth and thoroughly blended then shape the mixture around eight bamboo skewers.

Place on a hot barbecue or under a grill (broiler) and cook for around 8 minutes, or until done through.

Serve hot with lemon wedges and couscous. Accompany with a garlic and chive sauce.

For the Garlic and chives sauce:

Combine the mayonnaise, yoghurt and sour cream in a bowl.

Add the lemon juice then stir in the chives and garlic. Finally add the curry powder, oregano, olive oil, onion powder and hot sauce.

Season to taste then stir well to combine.

Serve chilled. This dipping sauce makes and excellent accompaniment to any grilled or barbecued meats.
