Kororareka Pork with Taimai Kumara Stuffing

                                                                                             

Ingredients:

Preparation:

Rub the inside of the meat with salt and pepper. Mix the kumara and the apple in a bowl, season with a pinch of salt.

Spread this mixture along the pork and roll up firmly.

Tie at regular intervals with string.

Place in a roasting pan and roast in a previously pre-heated oven at 180° C for 20-30 minutes then reduce the heat to 170°C and roast till cooked through.

Take it out from the oven and allow to cool down before placing in the fridge (we ommited this part). Chill and serve cold cut into thin slices.
