In a small sauce pan place the milk and the butter and cook until the butter is melted (don't let it boil).
In a large bowl, sift together the flour, yeast, sugar, salt and cardamom. Mix until well blended.
Add the milk - butter mixture little by little mixing until getting an uniform soft dough.
Knead the dough on a working surface until getting an elastic dough that doesn't stick.
Place in a bowl, covered with kitchen foil and let it rise in a warm place for 2 hours.
In the meanwhile mix all the filling ingredients together until well blended.
Lightly flour a working surface and roll out the dough until getting a rectangle from around 40 x 60 cm
Spread the filling on the dough and roll it up tighly.
Cut the roll in 3 - 4 cm pieces.
Press down the centers of the buns with your thumbs, so that the edges bulge out both sides.
Repeat the process with the rest of the buns.
Place the buns onto a baking tray (previously covered with baking paper, cover and let them rise for 30 minutes.
In a bowl whisk the egg yolk with the milk, brush the buns with this mixture and sprinkle them with the pearl sugar.
Bake on a previously pre-heated oven at 180 °C for 20 minutes or until golden brown.
