For the filling:

In a saucepan, combine the water with the palm sugar and bring it to a boil.

Once the sugar is completely melted stir in the coconut.

Once the coconut is moist and shiny and all the water has been absorbed, remove the pan from the heat and set aside to cool it down.

For the crepes:

In a blender, mix all the ingredients until getting and smooth batter.

Heat up a non stick pan, brush the pan with a little bit of oil, pour some batter to the pan and swirl the pan around so that the batter completely covers the bottom.

Cook the crepe until browned, flip it over and cook the other side for around 20 seconds.remove from the pan.

Put some filling on the crepe and roll it like a spring roll.
