Combine the minced lamb, onions, salt, black pepper and mint in a large bowl.

Mix with your hands to combine thoroughly,  then take portions of the mixture and form into sausage shapes about 10cm long and 5cm thick.

Gently thread these onto four wooden skewers, leaving about 1cm between each.

Cook on a pre-heated barbecue or under a grill (broiler), turning frequently and cooking until the meat is golden brown and done to taste.

When done, carefully slide the koftes onto a serving plate and garnish with the shredded spring onions before serving (we ommited the spring onions).
