Malawian Mango Chicken
For the Sauce:
In a large bowl, combine the chicken with the soy sauce, vinegar, ginger and sugar, mix to combine. Let it marinade for at least 1 hour.
Stir fry the marinated chicken with the green bell peppers. Add some water if too dry. Then add the mango and the peanuts.
Cook only long enough for the mango to get hot.
Combine 2 tbs flour with some flour, add to the pan, stir until it becomes thick.
Serve over a bed of rice (we served it with crusty bread).
