Cut the mushrooms into slices and put them in a heat proof bowl with the chicken, add all the remaining ingredients and mix thoroughly.

Cover the bowl with foil and place in a steamer over boiling water. Steam for 40 minutes (making sure to top up the water in the steamer from time to time.

Serve on a warmed platter and garnish with the coriander leaves.
